When Sean Evans and Chris Schonberger launched Hot Ones on YouTube in March 2015, the concept was pitched as a gag: interview somebody while they eat increasingly punishing hot wings. It should have been a novelty that died in a month. Instead it became one of the best interview shows of its era, because two things about it turned out to be serious.
